How is OpeningHoursSpecification formatted?

Each open day produces a node with dayOfWeek (e.g. "https://schema.org/Monday"), opens (e.g. "09:00") and closes (e.g. "17:00"). The generator automatically groups consecutive days with identical hours into a single node, keeping the output concise. Days marked Closed are omitted entirely.

Do I need to add geo coordinates (latitude and longitude)?

Is it safe to add an aggregateRating?

Only fill in the rating fields if your average and review count are sourced from a legitimate review platform (e.g. Google Reviews, Trustpilot, Tripadvisor).
